A CorkPopper Photo Tutorial: Homemade Tortellini

You love fresh pasta, right?   And you’ve always kind of wanted to try your hand at making your own tortellini, yes?  Well, wait no more.  Follow these few easy steps, and in no time you’ll be enjoying your own little homemade pillows of deliciousness!

The first step is to decide whether you’re going to make your own dough (recipe here) or use store-bought wonton wrappers.  If using your own dough, roll it out as thin as possible and, with a knife or pastry roller, cut the dough into equally-sized squares.

Next, place a small amount of filling in the middle of each square.  You can use whatever your want as your filling  – easy options include ricotta, spinach and shallot; sautéed mushrooms; or meat.  The filling you see here was homemade ricotta, lobster, and shallots.

Next, fold one corner of the square over to create a triangle and press around the filling to seal it inside, making sure to squeeze out any air bubbles.

Next, fold the top corner of the triangle away from you.

Next, take the remaining two corners and pinch them together.

Voila!  You’ve made your first tortellino!  Repeat the process until you’ve run out of dough and/or filling.

To cook your tortellini, simply cook them in a pot of lightly boiling salted water.  When they float to the top, they’re done.  Use a slotted spoon to gently remove them from the water.

Place your cooked tortellini in a shallow bowl, top with your choice of sauce, and enjoy!
